Loaded Fotato soup

First time trying the loaded fotato soup recipe from the Trim healthy mama book. (sorry no page numbers, I only have the e book right now.) the recipe from the book is only for a single serving. I needed to increase it to feed my crew of 6 and hopefully have enough left over to stretch into lunch the next day. I was very successful in doing so with 2 heads of fresh cauliflower. My little ones actually liked it and there was no complaints at the supper table! Only difference I made was adding some fresh baby spinach in during the last hour of cooking. I try to sneak greens in when I can :) Oh, I also used my 3 qt. crockpot so I could just chunk the cauli and have it cook for a few hours on low before blending it and then just returned it to the crockpot for a few additional hours.

My prices came from what I paid for ingredients at Aldi's:

Fresh cauliflower- $2.58/ 2 heads 
Turkey bacon-$0.73/ 6 slices
Low fat cheese wedges- $0.63/ 3 wedges
Fresh baby spinach- $1.15/ half bag

I just seasoned water and skipped the chicken broth because I forgot to buy it :) 

I cut up a half pack of the specialty dark rye bread from Aldi's and made croutons. For half a pack is $0.90.

I was able to get two meals out of this, but I do have boys with tiny little tummy's. If I break it down to one meal of 6 servings, this meal cost us $2/ serving. I made this an E by adding the croutons.
